Your wedding cake is more than just a delicious dessert for your guests. The cake itself is steeped in tradition and can be a beautiful focal point of your Reception.
It was an honour to take some time out with the lovely Rachel from Flower & Fondant on the Gold Coast to discuss the ins and outs of wedding cakes… Anyone for afternoon tea?
Tell us a little bit about Flower & Fondant and the products that you offer.
Flower & Fondant is a custom cake business based in Robina. Specialising is creating unique and perfectly executed cakes that are designed to perfectly suit each individual client. I offer cakes for all occasions, not just weddings. I also create cupcakes, cookies & macarons which can either be served alongside the cake as part of a dessert bar or can be individually wrapped making delicious as well as lovely wedding favours. Cookies and macarons are particularly well suited as favours as once packaged can last several days giving those guests that don’t want to eat them straight away the chance to take them home to enjoy later.
Share with us how you came to launch Flower & Fondant.
I have always dreamed of creating cakes as a business and about 4 years ago everything lined up to be able to turn that dream into a reality. We bought a house and with home ownership came the confidence to approach the local councils and get the permission needed to operate a food business. From there it is pretty much a case of ‘the rest is history’.
What inspires you when it comes to creating your stunning cakes?
Inspiration comes from many different sources. I pretty much look at anything now and start wondering how it can be turned into a cake! I love taking inspiration from the brides dress and flowers, invitations, bridesmaids dresses, colour schemes, the list goes on!
Do you work on your own or do you have a team of cooks?
Every element of the process from design, to baking, to execution and the delivery and setup, is all taken care of by me! Because of this and the high level of quality I strive to achieve I will only take on 1-2 orders per week so that each cake can receive the care and attention to detail it deserves. So you need to get in early to ensure that you don’t miss out.

Do you offer cake tastings or any other special packages? If so we’d love to find out about the products and services that you offer Brides.
I’ll sit down with the Bride, and often the Groom or Bridesmaids, and we got over design ideas and usually settle on a design that everybody loves. This process usually takes up to an hour, and is free. I then provide a tasting pack of about 4 flavours for them to take away and enjoy at their leisure. This also allows the Groom, if he wasn’t present at the consult, to still get a taste of the cake, which is usually the part he is most concerned about!
I also like to be in charge of delivering and also setting up the cake. There is a nominal fee (based on distance) for the delivery but that includes not only the delivery but also the set up of the wedding cake. I made sure that I am the one handling it from when it leaves my place until it is in position on the cake table. I like to know that once I have set up the cake it should remain safely on its table till the moment the Bride & Groom see it!
Do you work with Brides to create their wedding cake and/or sweets for their special day?
Yes, I like to sit down with them and go over all the details of what they would like and come up with their dream cake and any other details, like additional sweets and edible wedding favours like macarons or custom made cookies. This can usually be achieved in one consult but there is usually some correspondence after that to ensure all the details are finalised to the Brides satisfaction.
What kind of information do Brides need to consider when choosing their wedding cake?
The cake is usually a focal point of the reception room, it is seen by everybody and the cutting of the cake is a big part of the evening.
Every Bride has different elements of a wedding that mean more to her than anything else. If the cake is one of those make sure you choose somebody who will deliver on the quality and wow factor that will make your dream a reality.
The cake is also very much a feature of the reception decorations, you want something that will stand out but also match the rest of the decorations. While it is important to lock in your date with your decorator of choice the actual final choice of design can be left till closer to the date once other details like flowers, decorations, bridesmaids colours and other important decorative elements have been decided on.
The choice of cake flavours is also something that doesn’t need to be decided straight away, especially if the cake is to be served as dessert it is often best to wait until you have chosen your menu so that the flavours will be a suitable finish to the meal.
Everybody loves cake but what are your favourite flavours? And what are the most popular styles?
My red velvet with cheesecake flavoured buttercream is to die for! Everybody who has tried it instantly starts raving about it. Another favourite is my white citrus mud layered with white citrus ganache. It’s light and moist and an amazing cake (and my husband’s favourite!). And of course a dark chocolate or caramel mud is always popular. A personal favourite is sticky date cake, brushed with caramel sauce and layered with salted caramel Italian Meringue buttercream, YUMMY!
My two most popular styles are my White on White wedding cake and the simple but stunning Semi-naked Magnolia cake. Both are simple but quite stunning and can easily be customised to suit any colour scheme. Lace, metallics and statement sugar flowers are also very popular
When you’re not making delicious treats what do you like to do in your spare time?
Spending time with my husband is always number one, and getting to catch up with friends and family, usually over some good food and wine! Give me too much spare time though and I start dream about all the cakes I could be making and I start planning the next dream project!
