High tea no longer means scones and cucumber sandwiches. Thankfully the British tradition has been injected with a bit of fun and Wedding caterers have paid close attention, now offering out of the box options and wonderful spreads with a WOW factor!

To find out more about high teas and Wedding day catering we took some time out with Sara from Sugarize to find out how she stands out from the crowd with her delectable creations.
Can you tell us a bit about Sugarize.
As a pastry chef, Sugarize began from my love of all things beautiful and delicious! We specialize in elegant event catering, particularly high teas. We also cater morning/afternoon teas, cocktail events, styled dessert bars and grazing stations. We also make custom cake creations, donut/macaron towers and chocolate strawberry towers. We can cater for 20 to 200 guests.
Where are you based and what areas do you service?
We have two commercial kitchens based in Upper Coomera and also South Brisbane. We service North Brisbane suburbs down to Southern Gold Coast/Northern NSW.
What is your favourite high tea food?
The sweet selections are my favourite – especially anything with coverture chocolate or salted caramel!
What inspires you when it comes to putting together your high tea delicacies?
When I’m developing new recipes in the kitchen I tend to get a lot of inspiration while using local produce and, of course, tasting everything! I also take inspiration from other chefs that I admire.
Have there been any unique requests for any of the Weddings that you have worked on?
Donut walls have been a popular recent request and seem to be a fun and emerging trend!
What advice do you have for brides when they are thinking about having a high tea?
My best advice is to make sure you have a wet weather plan as many clients like to host their high teas in parks and backyards.
What is your favourite wedding story?
We have catered two surprise weddings and the reactions from the guests are just wonderful. It’s great sharing in such a big secret with your couples.
How early should couples book in for your services?
If booking for a wedding, the earlier the better! If it’s for a bridal shower best to try and book a few months in advance as our dates tend to fill up quite quickly.

Do you have a studio or warehouse for those who would like to see your pieces in person first?
Yes, absolutely. The studio is based in Upper Coomera and viewings are usually mid-week by appointment only.
Do you have a favourite piece among your collection and what is the story behind it?
My favourite items are my lavender Royal Albert tea cups. They were the first items I purchased when we began catering high teas.
When you’re not catering or styling weddings what do you love to spend your time doing?
I love to spend time watching movies and hanging out with my fiancee and two daughters.
